I’ve been craving Cajun food since my return from vacation in July – unfortunately they don’t have a muffuletta but the jambalaya (which I ate too fast to photograph) was to die for…as was the seafood gumbo and spicy fried chicken.

I can’t remember the last time I cooked anything more complicated than instant oatmeal – work has kept me beyond busy. I finished a major project today and decided to destress in the kitchen…with very delicious results. This was my first time making enchiladas and they turned out amazingly well. I used The Pioneer Woman’s recipe and omitted the olives (accidentally, but maybe on a subconscious level not so much) and David & BJ both agreed that they were a stellar first attempt. Pics below (as usual, taken by my iPhone).

Streaks has an obsession with my shoes. I’m not sure why, but every morning when I come downstairs they’re scattered all over the kitchen, and he frequently looks like he’s trying to actually WEAR them.
