I finally had time to cook!
I can’t remember the last time I cooked anything more complicated than instant oatmeal – work has kept me beyond busy. I finished a major project today and decided to destress in the kitchen…with very delicious results. This was my first time making enchiladas and they turned out amazingly well. I used The Pioneer Woman’s recipe and omitted the olives (accidentally, but maybe on a subconscious level not so much) and David & BJ both agreed that they were a stellar first attempt.
